Turbot is the Rolls Royce of fish. On restaurant menus it's often more expensive than the wine but buying this turbot means you can have your fish and drink wine with it too! Even though turbot is quite delicate in nature and taste, it has a good, meaty flesh (a bit like cod). Emma, an old hand at Abel & Cole, tried some dusted it with seasoned flour, pan-fried it and served it with a whopping salad. Her report: "I'd forgotten how good fish can taste. It was so fresh I felt that I was by the sea." If you're pining for a holiday, drop one of these into your order to tide you over. BTW... the Vernaccia di San Gimignano, Tuscany 2009 is a knock-out with this fish.

Our wild fish is caught off the Cornish coast by small boats fishing out of the stunning port of Looe. The BBC series 'Coast' featured the port, saying its day boat system brings in “the freshest fish obtainable anywhere in Britain.” Jamie Morton-Clark is down at the port each morning when the boats arrive. He’s our fishmonger so he’s in charge of picking up the best catches. “The fishermen use a variety of methods to catch certain types of fish and do what they can to protect the stability of fish populations,” he explains. “For instance, they have increased the size of the mesh in their nets which gives young fish a better chance of escaping from the haul. They also target species they know are in plentiful supply in different seasons.
